🍕 Low Faff Sourdough
The sourdough cult seems to thrive on faff. It doesn't have to be this way!
I got into sourdough as I missed Franco Manca pizzas. I admit I'm not doing the full bread baking experience. However I have made focaccia and some other little experiments.
Keeping a starter
I ordered this starter from Amazon
I keep it in a sealed jam jar in the fridge. Every couple of weeks I take it out and put it in a bowl. I add equal parts flour and water and leave it out for a couple of days. This is when I use it to make something. When I'm done I put an inch back in the jar a put it back in the fridge. My starter has stayed alive for four months so far this way.
Making pizza dough
The Franco Manca cookbook has a straightforward recipe for making pizza dough. Basically you make the dough the night before then leave it to rise.
Variations
I've also used the dough recipe to make focaccia. And adapted a sweet dough recipe I saw on TV to make a sort of sourdough brioche which was delicious.
